Christmas is coming and we trust this guide will be of use to you.


As ever, we shall be offering a wide range of meats for your Christmas table such as our own farm-reared award-winning turkeys, 28-day dry-hung beef and turnip-fed lamb.  All cuts are available to your requirements such as beef topside, ribs, sirloin and rump as well as legs and shoulders of lamb, racks of lamb and stuffed loins of lamb; all providing great taste and flavour and all produced locally in Surrey.

We can supply local goose, duck and chicken and also three-bird roasts.  Why not choose from a great selection of local game such as venison, pheasant, partridge and rabbit.

Our pork is all free-range from Ockham and Chichester, cuts available include legs on and off the bone, bone in and boneless shoulders, stuffed loins, tenderloins and racks.  We also offer smoked and unsmoked gammons cured by ourselves and ready for you to cook.

Our chef Richard will be preparing delicious home-made pork pies, chicken ham and apricot pies, gala pies and game pies as well as beef wellingtons crafted individually using tender beef fillet and the finest puff pastry, perfect for Christmas parties and New Year events.


Try those old favourites; steak and ale pies, steak and kidney pies, lasagne, shepherds pies, cottage pies and moussaka, all made to order. There are also plenty of mini sausages rolls in our freezer, ready for you to bake from frozen at home.

For us, the Christmas campaign begins at the end of November.  Our turkeys are kept under refrigeration as whole birds (known as ‘not yet dressed’) and then dressed about a week before they are required (‘oven ready’).  This enables the flavour and succulence to develop, qualities for which our turkeys are justly known.

As a rough guide allow 500g of NYD turkey per portion.

For example:- A 6kg NYD turkey, trussed to give a 5.1kg turkey with giblets leaves a 4.7kg turkey without the giblets (as the cooking weight) thus giving 12 generous adult portions.  Please allow approximately 15% weight loss for dressing and a further 5% if not taking into account the giblets.

For those wanting breast meat, we have turkey breast joints which are crafted from our larger turkeys and which have the same succulence and eating quality as the whole bird, these joints can be stuffed and topped with a plait of streaky bacon.  For darker meat, try a boned and rolled turkey leg.

We cure and cook all our succulent hams as traditional boiled, smoked and honey-roasted and as boneless or bone in known as ‘easy-carve’.


Why not order sliced ham supplied to your requirements in vacuum packs; perfect for buffets throughout the festive period.
